A Slice of Heaven (Part 2) - Beer Bread & Buns

For Part 2 in this  series   I decided to indulge into two other favorite bread recipes, that's is not just dynamic, but delicious and wholesome.  Beer bread and Buns.  In recent times it has been difficult to bake beer bread, and I don’t like to mention Covid 19 (hold my beer), but we were unable to purchase any alcohol as the government imposed an alcohol ban in our country.  This in turn inhibited me to bake or create anything that contained alcohol, especially our family favorite - beer bread.   Banned? The ban was lifted then imposed then lifted, then imposed again,  so when we had the chance to buy any beer (and there weren’t many - I am an Essential Worker), we had to jump to the opportunity. What to do with Christmas Leftovers




The festive season has finally come and gone.  Families returning back to their home towns, people unwinding from a very busy year gone by.  Many started to prep, for Christmas, months and months in advance, meticulously creating and re-imagining family traditions, and in an instant it has gone by.  As I'm writing this, my stomach is still filled with festive food and joy from family gatherings in the past few days.

Most of us cook a meal fit for an army, and we are often left with "leftover" (bits and pieces) food after all the festivities.  The question that is often presented to everyone is:  What can I do with all my leftover food?  One could probably reheat and revisit the holiday cheer as a Christmas 2.0 meal... but, keep life interesting and create something new, fresh and deliciously mouth watering.


Re-creating Food 

Luckily most of the cooking has been done, and eaten by now (if you are reading this post), and you probably stored all your leftovers in the fridge.  We were left with some Chicken drumsticksGammon and Leg of Lamb.  The chicken is perfect to add to pasta, you can check at the recipe here. If you are a lover of sandwiches, then a Pulled Gammon Sub is perfect for you.  It's quick and easy to make, and a winner with everyone around.  When you are ready to settle for something a bit more formal, then a baked Leg of Lamb Pie is your calling, perfectly paired with lovely wine and a gravy sauce to sooth your inner "sophisticater"  (new word, I know right).







Pulled Gammon Sub

Prep Time : 5-7 minutes


Ingredients

  • Leftover Gammon
  • French Loaf
  • Cheese (Mozzarella or Cheddar)
  • piquante Peppadews
  •  mix Lettuce
  • any Dressing
  • Mustard sauce (I made some from scratch for Christmas)

Method 

  • Layer every ingredient ontop of each other on the loaf starting by the lettuce, and ending with the peppadews.
  • Serve with mustard sauce on the side or on the sub.

 Leg of Lamb Pie

Prep Time : 25-30 minutes

Ingredients

  • leftover Leg of Lamb
  • mixed Vegetables (cubed)
  • 1 sheet of Puff Pastry
  • 1 egg for brushing

Method 

  • Mix the pieces of lamb with the vegetables and place in a mini oven casserole.
  • Cover with puff pastry and brush with beaten egg.
  •  Bake at 180'c until pastry is golden brown.
  • Serve with Gravy

Now, you have quick and easy meals made from Christmas leftovers.
