I really get excited for my days off from work during the week. With everything that is happening in the world right now, I can't wait to get home after a long shift. We all need a break from the world and all the drama currently in it.
Avengers, Assemble!
Every day we wake up early and like the Avengers, we assemble to fight the "fight" - and like all essential workers around the globe, we work tirelessly against the villain - Covid 19. It is not going away very soon and for now this is the new normal. Everyone needs a break now and then. They say home is where the heart is, and home is my happy place!
Dance like no one is watching.
Home is where I can be myself, unapologetically me. I can create without judgment, I can dance like no one is watching (Hawke - I see you). I can cook up a storm and make a mess, I can experiment with new ideas and just be me.
This tastes like Home...
We are blessed with lovely friends, who like us, share our home sweet home sentiment. On our last visit before the restrictions, we had a lovely evening filled laughter and joy. We are always treated to delightful delicacies (this seems to be far away, a time before the world went up in smoke). On this evening we were presented with a delicious baked Apple Dessert. The warm, soft and sweet sponge delight took us places. This tasted like home...
Trying to figure this out.
On our way back my mind went into overdrive, trying to figure out how to recreate this (but in my own weird and wonderful way). What can I add to this recipe, what can I take away? After a few failed attempts (including a spiced pumpkin version), I finally settled on a Peach Custard variant.
This delicious dessert is suitable for those cold icy winter days, or even for the scorching hot summer times. One can serve it with cool yummy ice cream or warm custard.
Baked Peach Dessert with Custard & Strawberries
Preparation time: 5 minutes
Baking Time : 45 - 55 minutes (depending on oven)
Servings: 8 - 14
Difficulty: 3 out 5
Ingredients:
- 1 can Peach halves (drained)
- 150g melted Butter
- 1 cup Sugar
- 2 large Eggs
- 2 cups all purpose Flour
- 2 tsp Baking Powder
- 2 tsp ground Cinnamon
- 1 litre Custard (preferable instant or self made - not boxed)
- 1 pack fresh Strawberries
- Preheat the oven at 180'C.
- Sift the flour, baking powder and cinnamon together.
- Add the sugar, butter and the eggs to the dry ingredients and mix well.
- In a lined or buttered baking tin, pour in the mixture.
- Gently submerge the drained peaches into the mixture, spaced out neatly.
- Bake in the oven 180'C for 45 - 55 minutes.
- Once baked, leave on a drying rack to cool down.
- Once cooled down, take the dessert and flip it over onto a serving plate.
- Cover the bake with the custard.
- Cut the strawberries into pieces and decorate the dessert.
- Serve with warm custard or ice cream.
