Farm to Table - The concept of serving meals, where the ingredients are locally sourced from farms. Everything on the table is from the ground and surrounding farmers.
Fall - a new season, the start of an era where we exchange t-shirts, shorts and cocktails for coats, boots and hot chocolate. As the first brown leaf hits the floor, a rush of cold chilly weather starts to make its' way to us.
Cold, Crispy Mornings
This time of the year is such a fun whimsical time in my life. If I dare say so, I rather hate the warm, hot sticky summertime (Summertime Sadness). The cold makes me so excited! A crispy cold morning with a hot cup of coffee is the best. These are the best mornings to spend on the farm and admire the beauty of blossoming crops everywhere.
Fall time reminds me of home, whether it's on the farm up north or in the city. A warm fuzzy smell of cookies, that are about to come out of the oven, fills the air and me with tremendous joy.
Season of the Soup!
Regularly during fall and winter season, we indulge in delicious soups - like butternut soup, green bean soup, chicken soup - just to mention a few. What makes these so special is the fact that our veggies come from the family farm, grown with so much love and care. We always try to incorporate as much love, care and joy into any meals that we prepare.
This soup can serve a delicious appetizer or main course. Please enjoy this recipe, and hopefully it give you as much joy as it has given us.
PS, I could only dream of winter again, as I find myself on this side of the world where summer has just started.
Spiced Butternut & Apple Soup
Prep time: 10 minutes
Cooking time: 30-60 minutes
Servings: 6 - 8
Ingredients:
- 1 Butternut (medium)
- 4 Apples
- 3 Onions
- 1 liter Vegetable Stock
- 1/2 tsp white pepper
- 1 tsp Salt
- 1 tsp Turmeric
- 1 tsp Paprika / Cayenne pepper
- 1 tsp nutmeg
- 1 cup Greek Yogurt
Method:
- Peel and chop all the vegetable into cubes.
- Peel and decore the apples and cut into cubes.
- Place all (except the yogurt) the ingredients in a pressure cooker and cook for 30 minutes.
- Once everything is cooked, puree the contents while it is hot.
- Salt and pepper to taste, and serve with a dollop of yogurt and bruschetta.
Add cinnamon before cooking for a "sweeter" taste.
One can also freeze the soup for up to two weeks and warm up at a moment's notice.
